I did a bit of racing but am def not an expert. When you hang off a lot you need a barometer for lean, I used my toes and the absolute limit was the engine case! I think thats why he's deliberately sticking that elbow out, to guage lean angle. Its right that more hang off allows bike to be more upright but if the bike moves suddenly he's definitely more likely to slide off it. Look at motocrossers and speedway riders, they do the opposite, push the bike down underneath them because they know its going to slide. Whatever, it definitely looks cool!
